Gratitude Saturday

So this is a new idea I had last week, but forgot to actually post anything on Saturday. I figure what better way to end the week than share what I’m grateful for.

I probably need this post more than ever today because I am in a monster funk. I’m fairly certain I know why… all you other ladies can probably guess, too. ANYWAYS, here we go:

This week, I am grateful for…

…reconnecting with old friends. I met up with two friends from high school at North Hills for their Beach Music Series where we listened to The Craig Woolard Band. They were fantastic! I don’t have pictures to share, well, you know why…

…having a mini-gym in my apartment complex. On Wednesday, I attempted my first interval run on the treadmill. Overall it went well. I warmed up for six minutes, then ran for one minute at 6.4, slowed down for 2 mins at 5.4 and repeated that for six times. I don’t think I’d be able to manage intervals without that treadmill though.

…my new crock pot. That meal I shared with you last time was so delicious and I’ve used the meat in sandwiches, etc., all week. I even made this roast beef, egg and cheese sandwich that was YUM.

When The Job Comes First

…or rather, when the job search comes first.

Clearly my posts are ridiculously sporadic, but I promise I am being productive with my time. I’ve made a few waves on the job search front. Last week, I attended a strange job fair called Tech Jobs Under the Big Top. I know… it doesn’t sound like something I’d normally be interested in, but well, I’m in transition, so I didn’t want to cross anything out prematurely.

Here are the highlights of the evening:

– A tech job is definitely something I can cross of my list. I will not be a software engineer. In fact, I’m still not really sure what they do. BUT… these companies still need marketing teams and public relations and even content creators. So while I will not create things, there may be hope for me yet.

– THEY HAD ACROBATS, and I learned where to take acrobatic lessons in Raleigh. She said they even had trapeze classes, but… it’s not the high-flying-circus trapeze. It’s the low circle thing. Still temped though.

In other news, I made a DELICIOUS meal in my brand spankin’ new crockpot. It’s called Mushroom Slow Cooker Roast Beef, and you can find the recipe here. I even browned the meat before putting it in the crockpot. It turned out delicious!

A Productive Monday

Ok, before I get into this post, I have a question for you all. I’m about to share what I did on Monday, but is this something I should have shared yesterday? How does this daily blogging thing work when you talk about your life and less about specific topics? Do you blog about Monday on Monday? Can you blog about Monday on Tuesday? SOMEONE PLEASE HELP!

Anyways, I did a very grown-up thing on Monday and got renter’s insurance. Apparently having this would have helped out when my purse was stolen last August… but the good news is that I have it now.

I followed that up with grocery shopping, which is a totally different experience from grocery shopping in Brooklyn. For starters, I have been shopping at Food Lion since it’s literally around the corner from my new complex, and the place IS HUGE! I used to walk up and down every aisle at my old Key Food in Brooklyn, but… walking up and down every aisle here would take three times as long. Also, shopping in Brooklyn made me a total food snob. I’m used to fancy brands and the latest healthy food trends. For example, there was no granola at Food Lion except these little containers by the nuts. No honey & oats granola. Worse, there was hardly any Chobani Greek Yogurt. And I didn’t look, but I doubt they have any kefir. I might try Lowe’s or Kroger’s… since I am obviously a spoiled food brat.

But the reason I went grocery shopping is because I decided to cook! I made turkey and spinach sweet potato hash from Carrots’n’Cake. The recipe was super easy. Although I only used one sweet potato because I don’t own a large sautee pan. In fact, none of my pans are large because I’ve only had a half-oven in all of my other apartments, which doesn’t have enough room on the stove top for a large pan. It’s kind of awesome to have a huge oven now though. I even want to buy a new cookie sheet because I can fit TWO in there!

This is something I’ll definitely be making again because it’s so easy and SO GOOD. I think next time I’ll add mushrooms to it though (mostly because I want to add mushrooms to everything).

I tried to take it easy on fitness since my run on Sunday sort of sucked and I have my Kick Ass 5K to complete today, so I did Denise Austin’s Body Makeover Mix DVD. Well… now my arms feel like JELL-O. OUCH.

My Weekend + Stuff

This weekend I had my first overnight guest (besides my loving parents, of course)! He’s an old friend from high school who stopped by on his way to our hometown. I don’t have any photos since his visit was cut short (and because I’m bad at taking photos… you’ll see this problem again and again), but we had a tasty dinner at this Mexican joint near me and went to see Jurassic Park in 3D in an IMAX theater!

This was my first time watching an IMAX 3-D movie. It was pretty awesome. Plus, who doesn’t love dinosaurs?

After he left on Saturday, I decided to head out to the Farmer’s Market. I hadn’t been there since I graduated college and my parents want to go there when they visit this weekend, so I thought it’d be smart to figure out how to drive there. (I tend to get really nervous driving when I don’t know where I’m going–especially when there are other people in the car with me.)

I ended up buying some sweet potatoes (which I made some sweet potato chips with, but again, I forgot to take a photo and I already finished them, but I’m going to make more so hopefully I remember to take pictures then) and a bottle of North Carolina semi-dry muscadine wine. Did you know there were different wines made from different grapes? Obviously I didn’t, so to educate myself, I bought a bottle.

Sunday was less exciting… I unpacked and cleaned more. My desk and bookcase that I ordered from Wal-Mart should be coming this week, so I need to make space for it. Once it comes, I’ll be sure to take a picture. I did some laundry (which I still love doing, by the way). Then I ran around the neighborhood.

PS: Tomorrow is Abby’s Virtual Kick Ass 5k! I’m a little nervous about it, but I think I’m going to run 2 miles around the neighborhood, then finish it up on the elliptical. Who’s joining me?

When Lazy Meets Fat

When I left my job, I had all kinds of ideas about how I’d run more frequently and up my trips to the gym. Instead, I ended up meeting friends for lunches and dinners almost every day of the week. When I wasn’t eating out, I was vegging out in front of the TV.

I knew I had let myself go. What I didn’t realize was how much… until I stepped on the scale (that I unpacked today). I’m not going to post a number because I’m too embarrassed, but let’s just say OUCH.

The good news is that I’m back to working on it. My dad and I started running while I was at home, and I’m trying to keep it up. I’m nowhere near where I was when I was running 5ks last year, but… I had never run a 5k before last year, so I  know I can get there again.

Not working leaves plenty of time for exercising, and since my complex has a fitness center, I force myself to go even when I’d rather just take a nap. The problem is that not working also leaves plenty of time to eat. I’m trying to develop a regular routine– scheduling times to eat, work out, job search and unpack–so hopefully that will help. But even then my eating habits sort of suck. My biggest problem? Breakfast. I never know what to eat! Also, it turns out I’m not a big fan of traditional breakfast foods, which also makes it hard.

I’ve gotten a ton of ideas from Carrots N Cake (probably my most favorite healthy blogger), but I’ll eat the same thing for a few months and get tired of it. So I need more ideas! Help!

Leaving NYC

I have to confess that I got a little teary-eyed the morning I left NYC.

Once the movers came and packed up almost everything I own in their truck, my parents, my aunt and my landlord (yep, that’s right!) all went to Bark for my last meal in Brooklyn.

My go-to meal: A chili-cheese dog, disco fries and a root beer.

While some people have their neighborhood bars where everyone knows their name, I had a neighborhood hot dog restaurant. I visited/made them deliver probably at least once a week while I lived there. And before I got cable, I’d go to watch UNC basketball games. (Brandon, the co-owner, happens to be a UNC fan who I became friends with.)

It’s definitely on the Top 3 list of things I’ll miss about living in New York.

Coming home to an empty apartment was also tough. That apartment had been my home for the past 3.5 years. My cats didn’t like it much either. All of the furniture and sleeping places had been packed up.

The toughest part was loading up the car and looking over the apartment one last time Saturday before driving away. I know I’ve said this before, but it was the end of a chapter I thought would last much longer. (Of course, I know I made the right decision to leave on my own terms though.)

So thank you, New York, for our time together. There were a lot of firsts and a lot of good times, but it’s time to move on.

Cookies Can’t Lie

Approximately two weeks ago while finding my new home, my parents and I decided to stop for lunch at an all-you-can-eat Chinese buffet. We discussed my options and which complexes we preferred. After making a decision, we got the check and our fortune cookies.

My fortune was this (and I’m paraphrasing, of course): Laughing is like jogging for your insides, which basically means you never have to go outside again to exercise. 

Now, call me crazy, but I could be totally down with that fortune.

Fast forward to today. My dear mom has arrived to keep me from pulling my hair out while trying to pack. (Bless her, seriously.) So we decided to get Chinese delivered. (This is a luxury that she does not have in my small hometown and could be a luxury I’ll no longer have. Do Chinese places in Raleigh deliver?!)

We eat our meals and move on to our cookies. What does my fortune say?

First, what kind of awful fortune is that? Two, it’s like a blaring red message that basically says laughter will not carry you through life. Start working out, fatty.
